Title: Economic Development, Health Information, and Food Consumption Behavior
Abstract:
An interesting phenomenon commonly observed in the process of rapid economic development is that individuals’ income and the prevalence of chronic diseases appear to go up hand-in-hand. Yet, given that health is a “normal good,” meaning that one would prefer to have more of it as income increases, this phenomenon is rather surprising. One explanation is that, under rapid development, household income increases more quickly than the stock of health information acquired by individuals. Thus, while they can now consume more previously unaffordable foods, they lack awareness of the unhealthy contents these foods may contain (e.g., fat and sugar), which highlights the role health information may play in inducing healthier food consumption behavior among them. This talk discusses two strands of recent studies that assess the impact of information on individuals’ food consumption behavior in China: one focuses on the information provided through disease diagnoses, and the other focuses on the information provided by food providers. Both strands of studies found a positive role of health-related information in steering healthier food choices.
